An evergreen citrus plant with long, irregular thorn covered branches. The pale green leaves which are a large oblong shaped grow to about 10-15cm. Attractive white flowers, tinted with purple from the outside, grow in fragrant clusters.
The fruit is very unusual looking with long fingers extending from the stalk. The fruit is very fragrant, predominantly used by the Chinese and Japanese for perfuming rooms. In Western cooking it is often used for its zest. Unlike other citrus the inner white pith is not bitter. The fruit can be used in salads or scattered over over cooked foods such as fish.
